What a Specialty Coffee Shop Really Is (and Why It Matters More Than You Think)
The result isn’t coffee that’s “stronger” or “more expensive.” It’s coffee that’s more honest.

For years, we’ve called many different things “good coffee.” Nice-looking places. Big cups. Perfect foam.
But specialty coffee isn’t about that. It’s about decisions.
A specialty coffee shop is the final link in a carefully built chain. It starts on a specific farm, often in another continent, with traceable names and surnames from the people that grow the coffee beans. It continues with a roast designed to respect the origin, not hide it. And it ends behind a bar where someone knows exactly what they’re serving - and why.
It’s not a label. It’s a standard.
For a coffee to be considered specialty, it must score 80+ points on the SCA scale. But that’s just the baseline. What truly matters is everything that comes after:
- Transparency about origin and producer
- Brewing methods chosen for the coffee, not convenience
- Trained baristas, not just fast service
- Respect for the product and for the person drinking it
The result isn’t coffee that’s “stronger” or “more expensive.”
It’s coffee that’s more honest.
What is the SCA?
The Specialty Coffee Association (SCA) is the global organization that sets the standards of excellence across the entire industry. Its mission is to ensure that, from the farm to your cup, coffee is treated with the utmost technical and ethical respect.
For a coffee to be officially considered "specialty," it must pass a rigorous sensory exam by certified experts, earning a score of 80 or higher on a 100-point scale. This score is more than just a number; it is a guarantee that the beans are free of defects, the flavor profile is exceptional, and every sip supports a fair and transparent value chain.
So why do specialty coffee shops matter?
Because choosing a specialty coffee shop means choosing to:
- Pay fairly for the work done at origin
- Support local businesses that care about craft
- Consume with intention, not by habit
